I only have one large folder in carbon steel, a Queen Mountain Man with stag (top one in the photo.) Fits well in a Buck 110 sheath.

I don't hunt myself so I can't really contribute but a pal of mine (who's a gillie) uses a Marttini fixed blade, when with clients, a mora, when he isn't, and an opinel for just about everything in between.
