Your grit of choise

To what grit do you sharpen your knives? I'd be interested of hearing other peoples opinions and experiences : )!
 
Totally depends on the app.

On my edc's I go up to 1200, then strop with ChromOx (green) compound.

On kitchen knives that will see flesh I go to 400 grit and a strop.

Woodcarving tools (mostly knives, one gouge) I constantly maintain with a strop loaded with carving knife specific compound. It's just a slightly gritty AlumOx, but it's friable and smooths after some use. Not sure about particle size on any of my compounds.
 
EDC is 1500 and green compound on the strop. That is for knives I have sharpened. For newly acquired pieces I start with a diamond stone and 700 ish until I get the edge I want.
 
Medium Sharpmaker triangles mostly. I'm still trying to get the hang of my 4k grit waterstone, so a couple knives are finished with that.
 
120 grit, 3k, or 0.5 micron. I would say that I optimize the finish for the intended job, but to be honest I just like experimenting with sharpening :D
 
As I use the Paper Wheels to sharpen my knives, the grit on the wheel is 180 I believe. Sounds coarse, but with the applied wax to keep the blades cool while sharpening, it seems much finer. No sparks when using with light pressure. Gets you where you want to be with a minute burr very quickly and with little loss of blade steel. Strop it on the slotted wheel loaded with compound and you are ready to shave hair and push cut phone book paper. 3 or 4 minutes tops and your done.

Depends on what your using, every method applies a different edge.

For diamond hones I like a fine 600 mesh edge.

For waterstones I have a obsession for Aoto stones and they range from 1200-4k depending on how you use them.

In general a abrasive around 15 microns does well for most cutting applications.
