I'm going to use one of these om my next project, what do you thin would look best on a drop point with mirror finish drop point hunter style.

I like the flamed maple #3 the best but not sure if it would look too busy with the mirror polish.
 
Dark may look better w/mirror polish, I'm with Jon on the flamed maple #3 though.

I don't know if the ebony will polish up enough to look right against a mirror-polished blade, it might look too grainy in comparison. The maple will polish up but would probably look better darker, perhaps you could use a bit of stain?
 
I think one of the maples would probably work best from that lot, given the lack of figuring in the ebony.

Really dig that Maple #3. For the knife you describe my mind's eye says one of the Ebony sets for contrast.
 
Which one compliments the flow of the knife? Line them up on the blade, and the right one will jump out at you.
