Since each collector tends to have a different focus for his collection, I doubt that there is such a thing as 5 knives that everyone must have. Someone who collects Case knives won't list the same knives as someone who collects Queen knives.

A more apropos question might be, "What is the focus of your collection and what 5 knives are central to it."
 
Amen, but still, there are a few things that every red- blooded American should have at least once in his/her life, same with every nationality. Example- U.S.A, a Ka-Bar USMC, and an Okapi for an African.
 
Case Barlow knife (my second knife as a kid)
Buck 110 (the "benchmark" for me as a kid)
Victorinox SAK (Climber or the like)
Case Peanut (my first knife...got one when I was 6 or so)
Ka-Bar (Another "gotta have"-still looking for one for myself)

I don't have all of these, I really want the clasp and melon tester just because i have always thought they were so cool ;)

Buck 110
Schrade Old Timer stockman - 34OT or 8OT
Case pen or peanut
Little Finn of some sort

Based on quality:

Case swayback jack
GEC executive whittler or gambler
Queen Burke small barlow
GEC 2011 forum knife

Keep in mind, I am not a Case fan and I prefer smaller knives. But, I bet dollars to donuts we all have a Vic Classic laying around somewhere. We all tend to agree about the qualities of the Case Swayback Jack. The Buck 110 is an iconic American knife. The Case Peanut is an incredible knife for its size. Finally, the #73 frame GEC is likely the iconic knife made by Great Eastern, as much as it may pain me to admit that.
