Thanks for the informative video! I'm curious about your grinder----I have a 8" 1725 RPM bench grinder with white wheels. So far, I've had no problems with burning-----I use a light touch and keep it moving. What speed/size is your grinder and what grit wheels do you usually use for re-profiling very dull knives? I've been doing my primary bevels by hand on the grinder where I need to make major changes in the profile (very dull knives, etc.) and then going right to my Sharpmaker. I use an EdgePro too, for primary bevels, but since it's slower, I only use it for 'showier' knives.

I'm always interested in hearing/seeing how others approach sharpening. Good job.

I notice you didn't lift the knife handle up all that much when you reached the tip, how did that turn out?
