looks like a very well loved jack knife to me but you never see the shield or much else to identify the maker..... Perhaps someone better versed than i will chime in.
 
It's a two spring model, with a heavily sharpened clip point main blade. Could possibly be a congress maybe? Looks like it may have some curvature to it, akin to a dogleg or peanut. Could be a copperhead? Cases jackknife pattern fits, as does the stockman if made on a two spring frame. It's difficult to say exactly with the grainy video and the little frame-time the knife gets.
 
To me it looks like it has two springs with a center liner and a blade in each end -- note that there's no second blade at the end with the clip he's using, just the head of the other spring. Something like a moose or double ended jack I figure.
 
What a wonderful film, thanks for posting it. There's nothing like watching an old time craftsman do his thing.

I was especially interested in how he moved - smooth, slow, and deliberate. No hurry but getting it all done.
