Tell me your thoughts on KAI zdp-189 I will be buying at least one zt with a zdp edge? I am a user and believer in ekmax and everything else just seems to disappoint me.
 
Love it. Keeps an edge for a long time, but is harder to sharpen if you let it get dull. Its some tough steel and more acute geometry isn't an issue. In my experience, it performs better with a slightly toothy edge versus a polished one.

Kershaw / ZT is the only manufacturer Hitachi will allow to heat treat their steel. All others must send it back to them for this. There has been mention that William Henry also is allowed to heat treat the steel, but that has never been confirmed.
 
I use a folder in zdp-189 as my food knife. Very sharp and cuts through everything easily. I make sure to strop with a diamond pasted strop to keep it razor sharp. Ceramic plates dull a knife instantly, but no worries because of the stropping.

Considering William Henry has their knives ground in Japan, it would make sense to just let Hitachi do it.
