Stupid question,Why do I see some 0560bw in black and blue boxes and some black and green and is there any difference?

Yes, the difference is in the ink they use to print the boxes.

I've gotten ZT 0300 and 0301 in green/gray printed box and a black/gray box
same knives

The black boxes are new, the older boxes were green....

I've gotten the same knife in different boxes. Just different runs, I guess. They must have changed it up.
