ZT 0350 with ZDP 189 Edge

Sorry for the newbie question,.... ZT350 w/ ZDP189 Edge.
Can any experienced folks here tell me what the working angle(s) should be for this material?
My old Spyderco Sharpmaker only goes to 40 degrees. I think the new ones also do 30 degrees. I thought I heard that 27degrees is best. But I really don't know.

Hope someone can shed some light on my predicament.

To generalize, I think a lot depends on what your intended uses are for the piece. Go thinner should you want it to be more of a slicer, and more obtuse if you're going to use it in more challenging applications. The nice thing about sharpening is it's not permanent, and you can experiment and find that perfect set up.
