ZT and Kershaw edge degree

Where can I find out what degree of edge my Kershaws and ZT's have?
My ZT's are 0200,0350,0400,0560 and my Kershaw's are Echelon,Blur,Leek aand two Scallions.
 
never once have i had a kershaw/zt with the same angle side to side. even my tilt was 20 on one side and 25 on the other..... My theory is sharpen to your own needs.
