.070 good for meat carving knife?

I've got a guy at work that is really into grilling and he will drop things off at my house for my family on occasion. Yesterday he dropped off an entire smoked pulled pork roast with au jus and his own bbq sauce! There's got to be 5 lbs of meat at least.

I'd like to make him a carving knife to go with the chef knife I've made him before. Would .070 AEB-L work well for this? I don't plan on putting too much distal taper in it as I don't want it to flex all over on him.

I've got .010 AEB-L as well.

A carving knife shouldn't flex IMO. My favorite slicer is a hair under 3/32 with a light distal taper (almost dead on 0.090) 10" length
