Here's the questions. does 1095 have any advantage over 1075?
If you have (two) blades made exactly the same. does the additional carbon in 1095 provide any advantages?
Will the additional carbon in 1095 allow that particular blade to achieve a higher hardness than the blade of 1075?

Different amounts of carbon, and other alloying elements change the various measures of strength, some better suited to narrow blades, such as slicers, and others that tolerate more abuse such as a camp knife. RC is only one measure to look at. Edge holding, wear resistance, deformation resistance, flexibility limits etc. all need to be considered.

1095 will get harder than 1075. The edge can be tempered to a harder edge and have longer edge wear. This makes it an excellent choice for fine cutting tools, razors, and kitchen blades.
Conversely, 1075 will be tougher than 1095, which is why it is a better choice for choppers, long blades, and swords.
