1075 and 1080 heat treating questions

A few days ago I posted a question about finding 1084 and apparently it's not easy to get in a 3/16 thickness (which is what I want).

Closest I can get apparently is 1080 or 1075 from the places people suggested I check.

This is going to be my first attempt at making a knife doing it stock removal and planning on heat treating it myself. From what I've heard on here 1084 is like magic for someone with little experience to work with. My question is how magical are 1080 and 1075 in comparison?

You won't see a difference in my opinion. The heat treating and specs are very similar. 1084 just happens to be a traditionally well controlled batch and has a very good rep.
 
Magic may be the wrong term, 1084 is suggested because you can get a good heat treatment with very little equipment. Stainless requires high temps and a controlled soak and 1095 requires a quick quench. the 84 is percent carbon 0.84% like 80 is 0.80 and 75 0.75% small difference and all will make a good first blade and the HT is the same for all.
