This is one of three "Japanese Gyuto Type" Chef knives I recently finished.
A Chef at Johnson and Wales wanted a heavy bladed Gyuto out of carbon steel "NOT STAINLESS". So I now have 2 left and will post one at a time until it sells.
Specs,
Forged to shape 1084 Carbon steel.
Full Tang and a distal tapered blade.
Blade thickness at the guard is .180"
Blade Length is 8.625" to the Bolster.
Overall Length is 13.875"
Blade height is a little over 1.875"
2hr Double Tempered at 450deg than 435deg, Rc 61.
Cocobolo handle with 3 Stainless Steel Corby bolts.
416 ss Dove tail bolsters.
Shipped in Zippered Case.
NOT DISHWASHER PROOF.

So once this one goes, you have 2 more to sell? I can't buy another knife for a couple weeks... I am interested though :) Looks very sexy!

OH MAN. I love my chef knife you made, Dave. You should see the awesome patina it has now (Edit: see attached!).

These things are built like tanks, and that price is ridiculous. I must look away now.

That patina is coming out perfect.
I Forged out the Petty knife but I will forge out 2 more before I contact you.
