Anyone know if 1091 is good steel for a knife? I have an unlimited supply of it and wondered if I could make any use of it?

Will,
Have it tested If the Manganese is .6 to .9 you have 1090. If the Manganese is .4 to .6 it's 1095. The 1090 is easier to heat treat do to the higher Mang. content.

Since there is no 1091, I would guess the steel is 1090. It could have been misunderstood when someone said 1090/W1. They are pretty much the same steel. W1 is made to a higher standard than 1090. In any case it should make excellent knives.
