I picked up a near mint condition Hen & Rooster large stockman a few years ago at a Nashville pawn shop. Beautiful stag that even matched on both sides! Pretty sure their carbon steel is similar to 1095. First thing I did was to cut up a bunch of lemons, peppers, tomatos and onions. I'd cut a little, wipe the blade off. A little later, I'd cut some more and then wipe the blade off. It didnt take long before the main blade turned a pretty light blueish grey color. Now, all I have to do is the same to the other two blades.
