I should know this, but I can't seem to remember which is preferable for knife making. I imagine CRA is preferable since it is annealed, but I'm not sure. Which should I order? Thanks in advance.

The 1095 CAR has not had a true (I think its called a spheroid anneal) What this means is you may still run in to sheets of carbides that may make drilling and hand filling difficult.
My experience has been very little difference in workability of 1095HR and 1098CRA from the suppliers that I have used.

Would heating the 1095 to 1500F and oven cooling give it a spheroidal anneal? Or is a long 12 hour cycle required?

I believe that the 12 hour cycle is needed for a Spheroidal anneal,
However
You can get 1095 down to a workable softness by taking them to a red heat and burring in wood ash/kitty litter/vermiculite.
I have found that steel buried in wood ash is still warn to the touch as long as 8 hours later.
It mite not be a full on razzle dazzle, two bags full, spheroidal anneal, but I can drill a hole in it and file it.:)
