110 from CS...S30V or 420HC

JD, in your sharpening system get a coarser stone in the 100-200 grit range and one finer in the 3-400 grit range. Of crystalline or diamond. This will help your blade tune ups go faster. Take it to the coarser stone first then on to the finer. I sharpen 4-5 knives each week. Some weeks more and have noticed in sharpening S30V it takes me about 40% longer to sharpen a blade of that steel over 420. But the return is 200% more cutting. Should you go with that steel you'll have to learn how to work it. DM
 
I agree. It does take more sharpening, but diamonds will do it much faster. However, there is a huge advantage in edge retention. There is a learning curve to the sharpening, as David said.
 
Thanks guys. I'm going with the S30V. It just seems to make more sense. Especially for the $13 extra. Since it's my first custom 110 I want the best, which I'm sure you all can relate to. Going to do the oak with nickel silver bolster and of course rivets. I'll be ordering soon, so when I get it I'll post pictures.

Just curious, why "of course rivets"?
 
I like the look of rivets with most handle materials, just my preference. I guess they can add a little to the grip, or at least you can feel them. They will help keep the handles in place if the glue lets go. Those are the reasons I prefer rivets.
 
I've found that the S30V sharpens just like Bucks 420hc. I've used wet stones, ceramics, diamonds etc. Freehand and guided. Infact I have found that S30V will actually take a toothy diamond edge, 600 grit or so much better than 420hc. So touch ups in the field with a diamond sharpener are a breeze, and the edge lasts along time!
