Description - This blade was made for carving large cuts of meat, such as brisket, ham, roasts, turkey, etc, etc. Is was hand-forged form 15n20 steel and has a 12in blade, with a 5in full tang handle. The blade is approximately 0.070in thick, so the blade is VERY flexible. It is great for flexing the blade around bones, intersections between muscles and so on. The bevels are full grinds that are the slightest bit convex, to prevent meat from sticking on the blade. The handle wood is Red Zebrawood, and is held together with brass pins.
