I'm guessing the "probe cover" is to carry water in. As far as the SRK is concerned, nice choice. I have one about the same age and really like it. Holds a good edge and easy to sharpen.

Thanks man! I just put a factory edge on it with my Spyderco sharpener after use. A fantastic beater for the price!
 
Should be doable with a little skill. For reference, here's a pic of the SRK dehandled, showing the tang:


Thanks for the pic! Was thinking something traditional, like tiger maple. Not sure if it would be durable though. Need to find someone who does handles.
 
That was a good one. I bought two carbon steel versions probably around early to mid 2000's and gave one to a buddy who was heading for afghanistan. The knife served, and to my knowledge, still serves him well.
