I'd probably go with one nice custom, or two cheaper customs.

Whatever the case, a Lochsa would be part of the deal.
 
I'd spend it on knifemaking equipment. Invest in the tools to make as many knives as I want for the price of steel and whatever mistakes I make on the first few.
