VCM3 Chef Set
Hand crafted set by yours truly. I had these in my kitchen,used & tested them.Expect some fine but not deep scratches here & there from normal use,but nothing bad. The stabilized ,figured birdseye maple is rare on these,book matched on both,cut from the same block. Very stable ,good looking wood for handles on your kitchen knives,rock hard maple. These knives have been used to cut food items daily and they take & hold a great edge , both knives have been hand washed with dish detergent by hand after use,repeatedly,they show no signs of "movement" at all & if any ,very limited.
In my experience I have tested custom kitchen cutlery priced way higher ,wih different types of 'hard wood' , some could not compare to these at all.
Both knives have 3/32" nickel silver pins
The Santoku is 10-7/8" OAL ,with 6" of cutting edge. 3/32" 440C flat ground , production blade. This is a fantastic size knife. I craft & sell these alone for $85. delivered, itself alone, is a great bargain. Rc is 58-59 on these,according to my supplier. The knife holds a good edge.
The parer /small boning,is a hand ground blade by Rick Menefee,heat treated by Rick as well. Simply stamped "V' is one of 3 . 7" OAL with a 3-1/8" blade,2-7/8" of cutting edge. I will include a very nice right side vertical sheath with this knife so it can double as a small hunter,bird & trout.
I do have the final third blade of this pattern,and is available as well,to be hafted soon,in figured African Blackwood . I sell these for $200. alone
