For the money, I think you'd be hard pressed to find anything better than the new Spyderco Persistence.

Spyderco Poli-wog would be great choice and it can be found with or without G-10 handles (if you prefer metal handles).

As posted before; the Spyderco Lava is discontinued but would be an excellent choice also.

I measured the U2's blade to be exactly 2.5" but I prefer the larger version of this knife. Here is mine:
