It's hard but I guess these would be my choices
1. XM-18
2. Case/Bose dogleg jack

Nope, couldn’t come down to just two. The best I could do is 14, a fixed blade and folder for each day of the week, providing there’s not a zombie Apocalypse.
 
At my age I might [buy] two more knives in whatever time I have left on this rock.
I won't get rid of all but two; some are better at different tasks than others.
Besides, my nephew/god son will get all my knives after I get planted. (except the two that will be in my pocket, and the one on my belt, that I'm taking with me.)
 
Solely based on cost (although they are top 5 for me), I'd keep my Halo V with hamon/bamboo inlays and my Emerson Custom Roadhouse Beast.
 
Two knives forever..... Right now it would be my Victorinox Adventurer and the Steelwill Mini Cutjack (C22M) in M390 and G-10. Love this Steelwill knife.

You got me thinking. I'm not sure I have answered the two knife question; just the one knife question. Or I forgot.
anyway . . . tonight anyway . . . I'm thinking these two :
My full flat ground, 1.9mm at the spine, Cold Steel Ti Lite IV in CTS-XHP . . . a formidable slicing machine (because I love this handle size / shape / practicality / blade length and shape).
and
The SAK Mechanic (I can't do without those precision pliers and the smaller blades would come in handy).

Only two knives for the rest of my life? How am I to address issues like hand injuries, handicaps, or needing a different knife as I grow old?

Pairing knives (pun intended) is something I often give thought to. Not so much the ‘if it had to be two’ type scenario, but real life planning for excursions in the great outdoors. Weight, intended use, people friendliness, value, all these play a part.

A really good budget combo for practical use is a Condor Kephart + Victorinox Farmer. You can accomplish a lot with that, and it wouldn’t break the bank if one or both got lost in the snow/bog/river.

Last time I was really out in the elements we were way above the tree and snow line, and I just took the Fällkniven PXL-WH folder. Was only going to be used for food, scraping ice/gunk from crampons etc. Perfect for the job, and certainly strong enough to do wood craft too, although not needed on that trip.
 
I would never agree to the terms of only owning 2 knives. :thumbsdown::D

If I you put a gun to my head, it would likely be something like my Gayle Bradley 2 and either my ESEE 4 or 6.

I could probably get by for the rest of my life with something like 4-5 knives though as I really don’t need 60+. :)
