I have a gyuto available in Aldo's 52100. This like the other one I have for sale is nice and thin behind the edge and an excellent performer.

Blade Features:

52100 high carbon steel
Convex and hollow grind reduces food stickage while providing high performance
Completely hand finished
Distal taper
Choil and spine have been rounded and polished for increased comfort
Edge was taken to a 6000 wetstone then stropped

Handle Features:

Stabilized African wenge ferrule and stabilized fishtail oak is separated by stainless steel spacers and 3720 year old carbon dated ancient bog oak.
Comes with carbon date certificate
Traditional wa handle shape
Completely hand finished
