20cv vs s30v - practical use and ease of sharpening

It all depends on the heat treatment of a particular knife. I came across both easy and difficult to sharpen S30V and 20CV, once I came across ATS34, which was so hardened that it was more difficult to sharpen than these powders. I had both steels on Buck 110 (I mean hardening from one manufacturer). Here 20CV required sharpening more rarely, I didn’t notice any difference in sharpening time (I used a two-layer Crystalon Norton)

Yes, you're probably right. My point of view is that I'd rather sharpen a knife more often and have it take less time and effort on each occasion. I don't enjoy sharpening knives so If it takes more than about five minutes to sharpen a knife, I'm not going to do it. I don't care if that means I have to sharpen a knife once every two weeks. I like my VG-10 Endura and Centofante 3, because they're so easy to sharpen. And S30v isn't much harder.

Keep in mind Thinner knives will sharpen up quicker too, so if the geometry is the same and the heat treats are done by the same company, it (20CV) shouldn’t be much more difficult than S30V.
If you’re comparing it to a Hinderer or Cold steel or something, you’ll have to take off a lot more steel tho.
