Here's a nice, shiny new gyuto made from mirror polished AEB-L. It has a somewhat transitional grind, the edge going from about .003" at the heel to zero at halfway and maintaining that thickness to the tip. The spacer is comprised of stacked and epoxied brass and 304 stainless which has been mirror polished. The choil and spine have been radiused and polished as well. The handle is made from stabilized and oil finished amboyna burl. In the second picture you can see the refection of the choil on the spacers reflected back into the choil, I've never seen that before.
