This little baby is a kitchen paring or utility knife made from 0.078" 26c3 steel. If you're familiar with Hitachi White # 1 (Shirogami), then you understand this steel. It is a very high carbon steel that gets crazy sharp, and is easy to resharpen. The handle is made from Padauk and African Blackwood, and has a slight "D" shape favoring right hand use. If you're left handed, that's not an issue as it feels just as good in the left hand as well. Hand rubbed satin blade finish with polished spine and choil. Every kitchen should have a knife like this one on the rack! Or better yet, in your hand!
