Hey everyone, I hope you are enjoying the 4th of July weekend! I just finished this paring knife for some lucky soul. This one checks all of the boxes for me with a paring knife. Very very thin. Very lightweight, dare I say "literally" as light as a feather! The steel is very hard and the grind is very thin. That's a lot of "verys"!

26c3 "Spicy White" is basically a Swedish version of Hitachi White # 1. It is an extremely (I was about to use "very" again) clean and fine grained steel that is just tailor made for culinary work. I like my carbon steel kitchen knives hard, and this fits the bill at 65HRC. The handle is walnut with a blue acrylic accent. The handle shape is very neutral, which is another box to check, as paring knives are often held with various grips styles. The blade stock is thin at 0.040" with a taper to tip, full flat grind, and a hand rubbed finish.
