3/4 hp variable speed vs. 1 hp pully driven...

Which one would your rather have on your grinder? The reason I ask is I decided to motorize my meat grinder (Mmmmmmmm......sausage) and I got a screaming deal on a 3/4 hp variable speed motor and controller. I know 3/4 is a little under powered but the variable speed sure would be nice. I know that at some point I'll get a more powerful motor for the controller and make the switch but I don't know if I should wait or not. Any thoughts?
 
That 3/4 for grinding is just too small. It might get you by if you were just going to make folders, though. Frank
 
Meat grinder's a bit differant than a 2x72 belt grinder. If I had that good a deal on a 3/4 horse I'd get it. I've thought of putting a 1/3 horse on my hand crank grinder next time I shoot a big doe. Of course that depends on how large your grinder is.

For a 2x72, 1 horse works, but will bog down, 1 1/2 to 2 horse better.
