I have three kitchen knives for sale. All have been used and sharpened two or three times each by me on water stones. Light scratches on the satin finishes. Scratches are light/small enough that I couldn't get good pictures of them. Edges are in good condition and do not have any chips or rolls. Each knife will shave hair easily. 1. Bob Kramer design by Zwilling/Henkel. Black polymer handle with FC61 blade. Made in Japan. This is the 8 inch version. I believe this steel is equivalent to AEBL, and it takes a very nice edge. Handle is large and very comfortable for my hands. Nicely rounded spine and heel. Selling because the blade shape is designed for rock chopping and that's not my preferred technique. Slightly wonky grind near the tip on one side. Can be seen in the picture below. Comes with the original box but without the paper that lined the box. Goes on sale new for $150. Asking $110.
2. Shibata Kotetsu Bunka. Made in Japan. Roughly 180mm blade of R2/SG2 powdered steel laminated between softer stainless. Octagonal Pakawood handle. This is a very thin, light, and nimble knife. Nicely rounded spine and heel. Blade is slightly convex to help with food release. There are some slightly deeper vertical scratches on the blade that are part of the original finish. Comes with the original box and packaging. Knife just doesn't get used much by me any more. They go for $230-245 new. Asking $190.
3. Zwillilng ZDP 189 Santoku. About 7 inch blade. Marketing material says the steel in MC66, but this was confirmed to be ZDP 189. Core of ZDP is laminated between softer stainless steel. Made in Japan. Black linen micarta handle with stainless bolsters on both ends of the handle. This was one of the first line of knives made by Zwilling in Japan. Thin blade ends in a very thin edge. Because of the thin blade and bolsters, the knife is handle heavy. Rounded spine and heel just to a lesser extent than the other knives listed. Knife is about 10 years old. I believe this whole line was discontinued and then brought back at some point. Comes with the original box. New version retails for $200. Asking $150.
