You can start HERE or pick up any physics/material-science text or just google "strength vs toughness".
Strength is the ability to resist deformation, toughness is the ability to resist fracture. Under slow bending stress (e.g. prying/twisting), material deforms elastic then plastic then fracture/failure. Under impact stress, the same steps occur but the nature of the material may be such that the deformation-phase is very brief. A physicist (or student of physics) could describe it better, but hopefully you get the idea. Happy reading! :)
 
3v is a steel that's good for chopping.

Folders are not good for chopping.

That's why you don't see many production folders in 3V.

The ZT0100 comes in 3V but it is a fixed blade.
