1095, it's not going to chip on those pecans, but equally it's not going to flex like 1055 and give you a wonky cut.

I got this Japanese pie/cheese knife recently, love it. Not sure if its 420 though. A Towle brand.

This Buck is 420 steel. Look at that pointy blade tip. Great for puncturing.
