19 degrees a side does not give you a 19 degree edge. It gives you a 38 degree edge wich I agree with Joe is not very thin at all. The newer steels shine when used correctly. If you take a new super steel and use it in the same thickness as a 400 series it will preform slightly better. Now get a ZDP blade taken to an apropraite thickness for that metal and you will see preformance jump quite a bit. For more on this read

I think it will shed alot of light on what you are seeing. CPM 440v is no slouch, I dont know of any cpm steels in knife making that I dislike. But I do beleive that there are steels out there that ground and HT'ed correctly will outshine it without problems.
