Up for sale, this Santoku style veggie knife. It is cut tall for scooping.
I have made several more formal Santoku knives, but this is a new study for me.

Specs:
52100 Steel
Full Convex Grind
Blade length 5 inches
Blade height just under 2.5 inches.
This was cut from .110 thick steel and is just shy of that at the spine.
Taper is fairly thin at the edge, but I left meat in the blade for smashing garlic and what-not. It is a sturdy blade with a nice edge.
The blade is belt finished to 300 grit, and etched.
Handle is Desert Ironwood and Macassar Ebony, bonded with Acraglas resin and finished with Boos block board cream (beeswax and food grade mineral oil).
Overall Length is just over 10 inches.

This has been sharpened to 6000 grit water stone and will push cut paper, and I am very pleased with it overall.
Because this is an experimental design I am keeping the price low.
Asking (Gone!) shipped continental US. Others please PM me for shipping terms.

More pics will be posted later today.
