$50 deer knife???

I think it's important to remember the fact that it's called the 110 Folding Hunter, and not the 110 Biker Knife, or Construction Knife, or Box Knife, or whatever. Nope, says it right on the box, 'Folding Hunter.' The 110 has probably processed more game than any other knife made in the last 75 or 100 years. Specifically because it's very good at the job. But, some people don't like to use a folder on game. And for them, there is the model 101. A fixed blade 110. I have both a 110 and a 101 in oak and 5160, fwiw.

But, in the OPs position, I'd look for a Cold Steel Drop Forged Hunter. One solid piece of 52100 bearing steel. Can be found for less than $50.
Second that, Cold Steel Drop Forged Hunter. I love me some 52100! Google it, a dealer has it for 39$ + shipping.

Were I in the market for a hunting knife for under 50 bucks Dexter Russell would be strong in the running.

Although, not necessarily a Dexter Russel. As has been mentioned as well, there are lottsa good "kitchen knives" that would do a great job of dressing a deer. There's a reason they call them butcher knives. If you yard sale or thrift store, you can pick one up for a song.

Advantage to this is that you can save up or figure out what works best for you to address cool factor (a real factor)

Would a folder really be best for this?
 
Definitely a fixed blade. Why gunk up the insides of your folder? Just buy something from Ontario or Mora with a clip or drop point. If you can find one a Beretta Loveless Dropped Point Hunter is very nice.
 
I use a buck paklite skinner for that very thing, but would recommend other buck fixed blades as well.

the 684 and 685 are great choices with the rubberized handles, as are the 119, 103, 105, 113, depending on what blade size and shape one may prefer
 
Deer? Buck 102. I would say 110 but they get gunky inside and have to be cleaned out or the brass rots. You just hose the 102 off and put it back in the sheath.

Mine is in 5160. In the forward canted, reverse draw, leather sheath I bought it is a very comfortable and capable little blade. Plenty big enough for deer.
 
I like the Spyderco Bow River because it is light weight, designed and made by experienced knife folks, and affordable. It is perfect for field dressing a deer

 
Look at the Morakniv Fixed blades. You get a nice one 20 to 30.

I am really surprised at all the folder recommendations..
Some years back a good friend handed me a 110 that the blade was stuck shut.. It was so badly gunked up with blood etc.. I soaked it for about a week and kept scrubbing it to get it to open.. I got it working as it should and sharpened it too.
Cured me on cleaning animals with a folder..

The Sencut Waxahachie goes for $50.35 and uses 9Cr18Mov with a good heat treatment. It's a significant step up from the 8Cr13Mov on the Bow River and easily one of the better choices for steel at this price.
