I don't think 1/8" 5160 exists. I can get 3/16" by about 1 1/4" and up. But I believe you'll have to take your 5160 to a surface grinder if you want it thinner.
You could get roughly similar performance with 1070 or 1084 in 1/8" stock from ADMIRAL but you'd have to play with the heat treating a bit to get it the way you want it.
If you do any forging you could also draw it down thinner with a hammer.
Take a look in your local yellow pages (if you live in a fairly large city) under spring manufactures. Just walk in and tell them what you want the steel for. They are usually the kind of guys interested in knives. (you might even offer to trade some knives)
I buy it for about a dollar a pound if memory serves me right. They will cut it to size for you and maybe even throw in some scrap. I wish it were available in smaller widths also but 1/4" is all I have found it in.
Go to a tractor trailer frame shop. I wanted to buy some full lengths of leaf springs, but didn't have any the right thickness but he gave me a full set of 3/8 used trailer springs! Make sure you give give him some money for lunch. He said come back any time!
Thanks guys.
It looks like I will have to hammer out some knives after all.Didn.t really want to learn anything new this winter but I guess I'LL have to.
Thanks Again
