Hi all,
I've got medium sized chef up for sale tonight. It's 52100 steel that is compound ground. It's flat ground 3/4th the way down and then finished convex on the last 1/4. It's not heavily tapered so there's not a lot of flex. It should make for a nice all around chef knife. The handle is shaped to facilitate a pinch grip and the balance point is just ahead of the front of the handle. The handle is some of the most beautiful wood I've worked with. It's Honduran Rosewood Burl with a cluster of eyes in the middle. The wavy figure at both ends make it look like it's bolstered. It's secured with small black micarta pins.
Specs:
OAL: 11"
Blade: 6.5" cutting edge, 3/4 full flat grind with the bottom 1/4 convex. 0.09" behind the edge. Hand sanded finish to 1000 grit. The spine and choil are rounded for comfort. 2" heel height.
Steel: 0.1" 52100 steel from Aldo, HT by Peter's to RC61
Handle: Honduran Rosewood Burl with black G10 liners and micarta pins.

It is an amazing wood. The only burls I know of that batch the density and figure of rosewood burls are ambonya and some rare kinds of Australian burl
