Hope you all are having a great weekend! I present my latest chef piece for your consideration
This 8โ bladed chef is a very thin and sharp tool that will quickly become a kitchen favorite. AEBL stainless steel is hardened to over 60 Rockwell C and full flat ground to 0.015โ before finishing at 15 deg/side for the micro bevel. The spine is right at 0.1โ above the choil. This knife is strong enough for hard prep, and slicey enough to make it a pleasure to work with.
Scales are food safe black acrylic with subtle metal flakes. Pins are mosaic and the red g10 liners bring some pop
all bonded with West Systems toughened epoxy. I have rounded the choil, chamfered the rear tip, and added pinch grip divots to keep you slicing/chopping in comfort.
