Hello Everyone, I’ve got a 8” carving knife available made from 8670 high carbon steel with natural canvas micarta handles. The blade has a forced patina giving it a subtle gray color, the carbon steel will continue to look better the more you use it and take care of it. The blade has a full flat grind that is ever so slightly convex towards the edge ground to below 10 thousandths you can flex the edge the whole way down. This will make a great slicing knife for your next BBQ or baked ham. The 8670 steel is very durable and takes a great edge, hardened to 61-62 it holds the edge well in use but is still easy to touch up and hone.
