Hi friends! John from Ohio here and I’m happy to show you my latest asset for your kitchen excellence!
Performance:
CPM Magnacut steel is a steel invented for knife making that is taking the industry by storm. Combine the toughness and hardness of a tool steel with corrosion resistance that can be used in a salt water dive knife, and you’ve got a low maintenance performer for your kitchen that will be a workhorse. This knife is hardened to RC 62-64 and ground to under 10 thousandths to give you the cut you’re looking for. Final bevel finished at 15 deg to 1000 grit. The cutting edge is 8” and the knife is 12.75” overall. Full flat ground tapers from the spine at 0.1”
Comfort:
To prep all day, you need a tool that works with you, not against you! I have crowned and polished the spine and tapered the scale front to provide long task comfort in various grip styles including pinch. The finger area around the choil is finished smooth and this knife is free of hotspots. The heel point is chamfered to avoid unpleasant pokes.
Aesthetics:
Gotta look good doing it, right? Double purple “jelly” pattern Alumilite scales give this custom handle a beautiful and durable ergonomic form. Scales are secured with West Systems G Flex and stainless steel 1/8” pins. A focal center damascus pin rounds out the refined and polished look. Special care not needed! No regular oiling or worry about rust. Simply hand wash , dry, and store.
