Hi everyone!
I've been a member here for many years but have never posted any knives for sale. I've been making knives on and off for about 12 years now. My knives have been sold by the 2 largest retailers of custom chef knives on the west coast. I also had a blade in Blade magazine's "Knives 2021". I figured I would start posting some blades here for your consideration.
This is an 8.5" Gyuto in AEB-L , cryogenically treated at 62rc. Most of my blades are .08 at the thickest part of the spine. All blades are ground post heat treat with water and bare handed to make sure they stay cool. Edges are also set under water as well (after reading the knife steel nerds article about drawbacks of setting edges on a belt) and are set at 16 degrees. The handle is a "Rainbow Trout" pattern with black G10 liners. The Loveless bolts are copper and brass. The choil and spine are rounded and polished for comfort.
SOLD shipped in the USA and the knife comes in a custom zippered case.
