For Sale - W2 and Wrought Iron French Chef Knife - Hand-Forged Knife - Free Shipping
Description - This knife is heavily inspired by Bob Kramer's famous European blade profile. The blade is forged san mai using Wrought Iron as the cladding and W2 steel for the core. The Wrought Iron is a fairly course grain and gives the blade a very organic look. The W2 steel core ensures that the edge material is correctly hardened steel. I love the look of Ivory, but it is obviously not ethical to use, so I was excited to try out this brand new Ivory G10 for a bolster material. The handle is made from orange dyed and stabilized maple burl. A brass spacer and pin add a subtle detail that makes the handle materials blend well.
Specs - Steel = W2 steel core with Wrought Iron cladding, Heat treated to spec using a PID heat treat oven, Hardness ~62, OAL = 14in, Blade Length = 8.5in, Blade Height = 2-1/8in Blade Thickness = 1/8in at the spine, Weight = 7.8oz
