I've been holding on to this beautiful knife for a while now, but it's time to let go. It is my first chef knife design, and features a gorgeous piece of Claro Walnut. The blade steel is the renowned Hitachi Yasuki Aogomi #2 (Blue Paper Steel), hardened and tempered for a final hardness of 63HRC. This steel was sourced from the New Jersey Steel Baron, when they had their hands on it for a time. Fully normalized and thermal cycled, quenched in Parks 50 fast oil. The blade features a nice thin grind, very slightly convexed just above the edge shoulders, and glides through the cut. The blade is a clean 1200 grit satin hand rubbed finish, my older stylized "S" makers mark on the left side, and "Blue" steel ID on the right. The handle has a black G10 liner and is chamfered around the edges for aesthetics and comfort. It would make a great gift for a friend or relative, or....treat yourself!

All of you probably know what a talented knife maker Stuart is. I didn't, but do now! The Aogomi Chef's Knife arrived today. We have other custom kitchen knives, but this one is special. The Handle is comfortable yet precise. The knife is balanced in the hand. This is our finest kitchen knife, and it's not even close. Thanks Stuart!
