Just finished up one of my 8" model chef's knives, made of .098" thick Crucible CPM-S35vn stainless steel, with heat treating done by me, in-house, including cryogenic treatment. This one is right at about RC 62.
Crucible CPM-S35vn is a very wear resistant and relatively tough stainless steel, and takes a great, fine edge and keeps it. Blade features full distal tapering with a satin finish to reduce sticking, and is ground to .004" previous to sharpening.
This knife features a gorgeous, heavily figured handle of stabilized Koa, with stainless steel pins. Handle tapers from thinner at the front to thicker at the back, allowing for almost neutral blade balance when gripped forward.
Same knife, but I'm toying with taking photos of these in portrait format - let me know if it sucks or not.
