Both are 440C at 59rc.
The Chef is just short of 1/8" stock & measures an 8" blade with a 13" overall.
The Pairing is 3/32" stock & has a 3" blade with a 7" overall.
Both feature a beautiful set of polished Snakewood scales, white G10 Liners, and brass mosaic pins.
