Here is one of my 8" chefs in 440c and Black linen micarta. ground nice an thin for ease of use and much less stress on the hand and wrist!
OAL- 12 5/8"
blade- 8" long tip to scales, .102" thick at the spine, .022" measured 1/4" behind the edge, and .008" thick at the shoulder of the edge. 2" wide
steel- 440c stainless. heat treat includes a double normalize, double anneal, single edge quench and triple temper for a really nice performing blade that takes and holds a great edge and yet is easy to resharpen! let me tell you I have never been a big stainless fan until I started working with 440c and came up with a pretty nice heat treat for it as I had so many requests for me to add a stainless steel to my lineup.
grind- a full flat grind, sharpened on a DMT 325 diamond hone with micro bevels, to an aggressive razor edge
finish- a65 machine finish then brightened on a blue scotchbrite belt.
handle- Black linen micarta with brass corby bolts. handle is finished with 200 grit with the lines running lengthwise with the handle so it looks good yet isn't slick
weight - 7.25 ounces
