Just finished up a pair with an 8" Chef's and a 4.75" petty. The chef's is handled in stabilized black palm and stabilized claro walnut. The petty is curly koa and maple burl, also stabilized. The sayas are curly maple. Steel is aldo's AEB-L, heat treated by Peters to 61 HRC. Chef's- 8" blade, 13" OAL, 1.85" deep at heel, 0.120" wide at the spine with full distal taper and tapered tang, 0.005" at edge before sharpening.
Petty- 5" blade, 10" OAL, 1.4" deep at heel, 0.98" wide at the spine with dotal taper, 0.007" at edge before sharpening.
