Hey guys! I have up for grabs one of my 8" Western Gyuto's. This one is in Aebl, one of my favorite cutlery steels. I personally have several knives in my kitchen with Aebl at this hardness, at it functions flawlessly. It takes a razor edge and is easy to touch up. The spine and choil are nicely rounded and polished for a comfortable grip in a number of positions. The grind is full height flat with a convex edge. It has a nice machine finish to help with food stickage. The handle is some gorgeous maple burl that I processed and had professionally stabilized and dyed by K&G. It has my trademark copper/carbon fiber "hybrid" pins. As with all of my knives, I offer lifetime free sharpening. You just pay shipping.
