Hi guys,
I just finished up a Japanese style prep knife. It's my take on a Mukimono type and I love it as a kitchen slicer. I ground the blade for right hand use. It features a 70/30 asymmetrical grind with the back being full flat ground to the spine. The front is hollow ground with one of Nathan Carother's 36" radius platens. I took the edge down to approx. 0.009" and then sharpened with it with DMT stones.
The handle is a mix of Macassar Ebony and Mango with a front ferrule of Corian.
